The barley flour in these low-fat, diabetic-friendly gems gives them a unique, sweet whole-grain flavor. Make this generous batch and freeze some for future use. • ¾ cup unsweetened soymilk, warmed to 110 F. • 1 ½ teaspoons rapid rise yeast • 1 cup barley flour • 1 ¼ cups whole wheat pastry flour • ½ teaspoon salt • 2 tablespoons + 2 teaspoons canola oil • Vegetable cooking spray Preheat oven to lowest temperature to create a warm oven, then turn oven off. Briefly whisk together warm milk and yeast and set aside. In a medium bowl, mix dry ingredients together. Add the oil to the yeast mixture, and then add to dry ingredients. Stir quickly, but as little as possible. Dough should be moist, but hold together. Mixture will be sticky but fluffy. Turn out onto a well- floured board. Make dough into a ball and roll out with a rolling pin to 1" thickness. Cut biscuits using a 2" biscuit cutter. Place biscuits, sides touching, on baking sheet sprayed with vegetable oil cooking spray. Let rise in pre-warmed oven for 30 mins. Without removing from oven, turn the oven up to 350 F. Bake 14 mins. Until golden brown. O U R A M A Z I N G B R A I N (Jenifer Skues- Psychologist) thatmakes us the most intelligent creatures on earth (I wonder sometimes when I make silly mistakes). Our brain is the most intelligent compared to other mammals and creatures and this is measured by brain size in proportion to the body. Our brain weighs 1.3-1.4 kilograms, whereas a large male elephant's brain weights 4.2-5.4 kilograms, and the sperm whale has the largest brain of all weighing approximately 7.8 kilograms. You would think that a large brain would be more intelligent, however both the elephant and the sperm whale have very large bodies so it has a lot more work to do compared to us humans. Our brain is very sophisticated and capable of doing far more than we use it for, in fact we only use about 1-5% of our brain at any one time, whereas the genius uses up to 15% of their brain at any one time. Imagine if we learned to use more of our brain. Furthermore, science has now found that it is a use it or lose it principle. Brain cells constantly die and are eliminated from our body, but new ones keep growing if we challenge our brain. Scientists say that the brain is neuroplastic, in other words, like plastic, it can be shaped and moulded. We measure the brain by assessing our Intelligent Quotient (IQ) that measures the logical, rational mind. Our potential IQ is inherited, but its functioning can be enhanced or diminished, depending on our models, nutritional input, and experiences in life. You can be an intelligent person but it doesn't make you the happiest or most balanced individual. A better measure of our wellbeing is our Emotional Quotient (EQ), that is how balanced we are emotionally. So, do you have emotional maturity? Our EQ is not inherited or wired prior to birth like our IQ, it is learned. We mature emotionally through hard earned experience and appropriate skills to deal with negative and distressing emotions. Someone who is emotionally mature isn't perfect and will still have problems in life, but they have the insight and skills to deal with their negative feelings and put them back in perspective. In Psalm 139:14 The Bible tells us that we are "fearfully and wonderfully made" (NKJV) so let's use our brain more effectively.
